Guisado

Ingredients:

1 can of sweet corn or 4-5 soft raw sweet corns
1/4 cup of chopped onions
1 garlic clove, neatly chopped 
500g Italian passata 
1/2 chopped courgettes
Oil
Salt and pepper

For the red rice you need:
2 tablespoons of chopped onions
1 1/2 cups of rice
1 cup of Italian passata
Oil

(Serves 4)

Method:

For the raw corn, put them in a pot, cover with water and boil. 
Pour the oil in a pan and sauté the onions and garlic. Add the Italian passata and some salt and pepper and let it sit until the passata changes colour.
Fry the courgettes and corn in a different pan, and add the sauce when the courgettes are soft. It should take about 10 mins.

For the red rice:
(using a rice cooker, which would never happen in Mexico, but it worked ??):
1. Mix the rice with the onions and pour into rice cooker.
2. Cover about 1 inch with passata. The rice will be ready in about 15 mins depending on your rice cooker.

(for a pot) *it is better to use a thick pot
1. Warm up the oil, medium heat. Sauté the onions for approx. 5 mins.
2. Add the rice and stir. When the rice is brownish, add the passata. Reduce the heat to low, cover with lid, and cook for 20 mins or until the water is gone.
