Couscous Salad
	
	Ingredients: 
	Couscous 200g
	Vegetable stock 400ml
	Red pepper
	Bunch coriander
	Bunch parsley
	Red onion
	Half cucumber
	Salt, Pepper to taste
	Tin of beans of choice
	(serves 6)
	 
	Method: 
	- 
		Boil water and make up stock, add cucumber core, pour over the couscous, cover and leave to sit for 10 mins.
- 
		Chop pepper, onion, cucumber and herbs very finely then add to couscous when it has finished cooking.
- 
		Mix all well and serve.
