Sweet Potato and Spinach Dhal

A very easy, yet tasy recipe suitable for vegans and vegetarians.

Serves 4

Ingredients:

100g Red Lentils

500ml Vegetable Stock

1 Onion, chopped

2 Tomatos, chopped

1 large sweet potato, peeled and chopped

80g spinach

1/2 tsp turmeric

1/2 tsp chilli powder

1 tsp garam masala

Method:

1. Put the lentils, stock, onion tomatos and spices into a pan, bring to the boil and simmer for about 10mins while stirring frequently.

2. Add the sweet potato and cook until soft.

3. Add the spinach and cook for another minute until it has cooked.
