Carved pumpkins with 'VegSoc' carved into rightmost pumpkin.

Pumpkin Soup

Prep: 20mins Cook: 25mins

Ingredients:

4 tbsp olive oil
2 onions, finely chopped
1kg pumpkin, deseeded and chopped into chunks
700ml vegetable stock
142ml pot double cream

With Bread to serve

Method

1. Depending on whether or not you want to use the pumpkin for carving you can either scoop out the insides and remove the seeds or you can just peel and chop the whole squash up!

2. Fry the pumpkin in the olive oil for 10-15mins

3. Once the pumpkin has fried transfer it into a sauce pan and add the stock and then simmer for about 10mins

4. Add the cream and bring back to the boil

5. Now blend with a hand-blender!
