Chilli Bean Stew, with Crusty Bread

Serves 2

Ingredients:

1tbsp Oil for frying
1 Onion, sliced
1 Glove of Garlic, finely chopped
1 Red Pepper, chopped
A Handful of Mushrooms, sliced
1 Tin of Chopped Tomatos
1 Vegatable Stock Cube
Chill flakes (to taste)
1/2 Mug of Water
1 Tin of beans, you can choose from:
 
Aduki, Black eye, Baked, Haricot, Butter, Kidney and many more!
 
Crusty bread to serve.
 

Method:

1. Heat the oil in the pan and add the onions and garlic.

2. After the onion and garlic have fried for a few minutes add the pepper and mushrooms and fry for a further few minutes.

3. Add the remaining ingredients and bring to the boil.
