Ingredients:
2tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
1 potato, chopped
2 tomatoes, chopped
1,25l Veg stock
A sprig of tyme/sage/rosemary
800g cannelli beans, drained (we used haricot/baked beans and kidney beans)
150g dried pasta
A pinch of dried chillies
Salt and pepper
Cheese, grated, to serve
Method:
1. Heat the oil in a large pan, add the onion, garlic and potato and cook for 5mins, stirring occasionally.
2. Add the tomatoes and cook for 3 mins until softened.
3. Add the stock, herbs, beans, pasta, chillies and salt and pepper.
4. Bring to the boil and simmer for about 10mins until the potatoes and pasta are cooked.
5. Serve with the cheese.
