Carved pumpkins with 'VegSoc' carved into rightmost pumpkin.

Ingredients (serves 4-6)

1 tbsp vegetable oil
1 onion, sliced
225g potatoes
2 medium leeks, sliced
1.2l vegetable stock
salt and pepper to taste
 
Heat the oil in a large pan and add the onions, potatoes and leeks. Cook until they begin to soften. Add the vegetable stock and bring to the boil. Allow to simmer until the vegetables are tender. Blend until the mixture is smooth, and serve.
